Deliciously healthy baja fish tacos with the sweetness of mango from The Flying Mango!

Directions:

Flavor a couple basa fillets with lime juice and some ancho chile powder. Place season side down on grill. Then squeeze some lime juice on the side facing up, along with more ancho chile powder. Once the bottom side has cooked a bit, flip to the other side.

For Mango Salsa, mix a diced mango, minced jalapeno, chopped red onion, salt and pepper, squeeze of lime juice, and fresh chopped cilantro. Use as much or as little of each ingredient that you like. Give it all a stir.

Warm fresh tortillas on a skillet with some oil or butter.

Once fish flakes easily, remove it from grill. Dice the fish fillet and put on tortilla. Top with mango salsa.
