A marinade always has oil, acid, and an aromatic.

The oil is the flavor highway. It’s the way all the seasonings get into the meat. 

An acid tenderizes the meat. 

The aromatic is where the flavor comes from. 

Some tips:

Marinade for 4-24 hours. Don’t let it marinade for more than 24 hours because the acid will break down the meat. 

If you are working with a tender cut of meat, you only need 15 minutes to 2 hours. 

Avoid sugar.
