Chickpea Avocado Toast
Serves 2
- 1 can chickpeas, drained and rinsed
- 1 avocado
- Juice from 1 lime
- 1 green onion, chopped
- 2 celery sticks, chopped
- ¼ cup cilantro, chopped
- ¼ tsp garlic powder
- ½ tsp dill
Add all ingredients to a bowl and mix together well. You can use a fork to mash the avocado and some of the chickpeas. Add greens to toasted bread and spread chickpea mixture on top.
